Leutia Saga bhaja (Tasty Odia Saga Bhaja Recipe)

Saga bhaja leafy veggie recipe is very common in Odisha. Many types of saga bhaja recipes are there like koshola, palanga, sajana saga, etc. But this recipe is about Leutia saga bhaja (Green Amarnath or Green Amaranthus leaves). These types of varieties of saga bhaja can be eaten with the popular Odia lunch recipe i.e Pakhala Bhata. or this saga bhaja can be eaten with lunch items like rice and dal.

This also helps in reducing excess cholesterol in our bodies. Very beneficial for eyesight. Gives energy to the body and is very beneficial for weight control. It also improves your digestion.
Where to find and When Leutia Saga: You can get this easily in Summer Season at your local vegetable market. Also, you can grow the saga in your home garden.

Equipment

  • 1 Frying Pan
  • 1 Big bowl To clean the saga
  • 1 Chopper or knief To cut the saga
  • 1 Chopper board
  • 1 Spatula

Ingredients
  

  • 1 Big Bowl Saga The saga will come like many sagas are tied with a single lace
  • 1 Cup Khakaru badi To add in the fry to enhance the taste
  • 1/2 Cup Chopped brinjal
  • 5-7 pc Chopped garlic cloves
  • 1-1 pc Dry chili
  • 2-4 tbsp Oil Mustard oil will give better taste for saga bhaja
  • 1/2 tbsp Gota Jeera
  • 1/2 tbsp Gota Sorisa
  • Salt as per taste Do not add more salt into the saga because the amount will be shrinked after the water content evaporated.

Instructions
 

  • First take the saga and clean it with water. Rinse for at least 4-5 times so that there should not be any waste material like sand or stone etc.

  • Now drain the water from the saga by putting it above a holed pan.
  • Now chop the cleaned saga to make the bhaja or fry.

  • Now, lets prepare other items to be added in the saga bhaja.
  • For this, fry the kakhakuru badi with some oil. Do not fry the badi more.

  • Now chop the brinjal into small pieces.

  • Now put the frying pan into the gas stove and add some mustard oil into it.
  • When the oil is boiled then add some gota jeera and gota sorisa into it.
  • After 20-30 sec add dry chili and and chopped garlic cloves into it.
  • Now add the chopped leutia saga into it.
  • Do not cover the lid until the water content is evaporated.
  • Once water is evaporated then add badi fry and brinjal into it.

  • In between toss the saga using a spatula.
  • After 4-5 minutes hot leutia saga is ready to serve with lunch or pakhala bhata.

Notes

A very important note for this Leutia saga (Amaranthus leaves) bhaja or Saga Kharada recipe is do not overcook the saga.
Also do not add turmeric powder to it.
