Palanga Saga /Palak Saag/ Spinach Fry Recipe

The main ingredient of this tasty and healthy recipe is Spinach leaves (Palak Patta or Palanga Saga). We will make this saga bhaja by adding Badi, Baigan (Egg Plant/brinjal).
The scientific name of Palanga saga/Spinach/Palak is Spinacia oleracea. We can make hundreds of recipes by using Palak leaves. Here I am presenting a very easy and simple Palanga saga bhaja recipe. This recipe is very authentic Odia Cuisine. You can eat this Palak Sag Bhaja with Rice or Roti. But Palanga saga bhaja tastes great with our Odisha's famous Pakhala Bhata.

Equipment

  • 1 Pan To Fry the Palak Sag
  • 1 Bowl To wash the Spinach
  • 1 Knief To cut the Spinach leaves

Ingredients
  

  • 3-4 Bundle Palanga Saga/Spinach leaves/Palak Sag It comes with a bunch or bundle. So you take 3-4 bundles
  • 1 PC Brinjal/ Baigana/Egg Plant
  • 7-8 PC Badi / Sundried lentil dumplings
  • 4-5 Cloves Garlic
  • 2-3 PC Dry Red Chilli
  • 1/2 tbsp Gota Sorisa / Black Mustard Seeds
  • Salt As required

Instructions
 

  • First, take the bunch of Spinach leaves/ Palanga Saga/Palak Sag and wash it properly 3-4 times. Check no stone or other extra particles in the leaves.

  • Now, Cut the Spinach leaves to make the recipe.

  • Now, cut one eggplant/ Baigan / Brinjal into small pieces.

  • Now, take some Badi or Sundried Lentil Dumplings and crush them.

  • After crushing the Badi fry it in oil for 30-40 seconds and keep on a plate. It will be added to the Palanga Saga Bhaja later.

  • Now, put a pan/Kadhai on the gas stove and switch on it. Add 2-3 tbsp oil to it. Add some mustard seed, crushed garlic clove, and dried red chili into the hot oil.
  • After 10 seconds put the small pieces of baigan/egg plant into the hot Pan/Kadhai.
  • Once you saw the baigan / eggplant is soft then after 1-2 minutes add Palak Patta / Spinach leaves into the Pan/Kadhai. Add salt accordingly by seeing the total amount of Spinach leaves and baigan on the Pan.

  • After 5-6 minutes add Badi Chura into the Pan.

  • Mix all the ingredients properly and cook for 2-3 minutes. Now the healthiest Palanga Saga Bhaja / Spinach Recipe is ready to eat and serve.

Notes

Very Special note for the Palanga Saga Bhaja Recipe is do not add turmeric powder into the recipe.
Garlic is very essential for this type of Saga Bhaja recipe. It enhances the taste.
Do not forget to add Badi/ Sundried lentil dumplings which enhance the taste of the Spinach leave recipe or Palak Sag recipe.
